Sunday Paper Edition 014: On Love
30 January 2022
The Perfect Bottle
If you decide to stay in, we highly recommend that you pop open a bottle of vintage rosé Champagne Allegiance 2013 by Marie Courtin. Deeply coloured and characterised by a complex nose of pomegranate, mint and dried pear and a savoury palate, this is a unique expression of champagne. Biodynamically made from 100% from pinot noir grapes and fermented wild with natural yeasts, it is reminiscent of a red burgundy with bubbles.
Cosy Cashmere
Once you’ve poured a glass of spectacular champagne, curling up underneath a sumptuous cashmere blanket is an obvious next step. Ours is sustainably made and woven in a storied mill nestled in the Tuscan hills and comes in two sizes. The Small is an elegant shawl that doubles up as a travel blanket, while the Large is perfect as a more substantial piece at home.

What We’re Making For Our Valentine
For anyone who wants to go the extra mile for their loved one, these nutty, chocolatey, spicy Walnut Kisses is a sure-fire way to make them weak at the knees. The recipe is courtesy of Joe Trivelli, Head Chef at London’s River Café.
Walnut Kisses – Baci di Noci
INGREDIENTS:
15g butter
25g brown sugar
Pinch of sea salt
Pinch of ground cinnamon
Pinch of fennel seeds
100g shelled fresh walnuts of cobnuts
150g dark chocolate
METHOD:
Have a piece of baking paper stretched out on a board before you begin.
1. In a pan, melt the butter over good heat. Add the sugar and salt and when they have melted, sprinkle in the cinnamon, add the fennel seeds and then the nuts.
2. Allow to caramelise for 2 minutes, stirring with a wooden spoon before scooping onto the baking paper. Allow to cool completely.
3. Bring a pan of water to the boil. Roughly break two-thirds of the chocolate into a metal bowl that fits into the pan. Place over the water but not touching, and turn off the heat. Leave it alone to allow to melt completely without stirring.
4. Once melted, remove from the pan, add the rest of the chocolate and wait for that to melt as well. It will be a good deal thicker than when melted all together over water and hopefully won’t have lost its temper.
5. Stretch out a new piece of baking paper over the cooled sugared nuts.
6. Crunch the nuts inside the paper (bash them with a rolling pin if you like) and dump them into the chocolate and fold through gently.
7. Teaspoon this mix back onto the baking paper using a spatula to help. When you’ve done the lot, leave to cool for 30 minutes. If kept sealed and stored somewhere cool they should last a couple of weeks.
